Sambar Recipe : Tasty Kerala Style Sambar | Varutharacha Nadan Sambar
Sambar is a gravy dish made in southern parts of India .It has so many different variations and is an important item in sadhya.Variety of vegetables can be used in making sambar in different regions and according to seasonal availability of vegetables.It is Lenthil based gravy made with a masala made out of roasted fresh coconut and other spices on a tamarind broath and mixed with cooked vegetables.Sambar is a curry dish usually served with hot steamed rice or with steamed idlis.

Preparation:

1 Pressure cook dal with water for 2-3 whistle

2 After the pressure settles open the cooker and add the vegetables like potatoes,drumstick,brinjal,ashgourd and carrots along with turmeric powder and salt.Pressure cook it for 1 whistle.

3 In afrying pan add small quantity of coconut oil and saute small onion(shallots) ,ladies finger and tomatoes seperatley.

4 Now Add this sauted vegetables along with  few green chillies and curry leaves into the cooked vegetable dal mixture and cook it for 5 minutes.

5 To this boiling mixture add tamarind juice and allow it to boil foe 2 minutes.

6 Meanwhile in a frying pan add soe coconut oil and roast freshly grated coconut along with some shallots,curry leaves,fenugreek seeds,coriander powder,red chilly powder and some asafoetida.

7 After cooling down grind this roasted coconut mixture in to a fine paste by adding enough water.

8 Add this masala paste  in to the boiling curry and cook for 2 minutes.

9 Heat a small pan and add coconut oil splutter mustard seeds,fenugreek seeds,curry leaves,dried red chilly and asafoetida and pour this tempering into the sambar and mix properly.cover and let it sit for few minutes.

10 Mix the curry well before serving.Serve With Stemaed Rice,Idli or Dosa...Enjoy!

Brinjal 1.0 Cup Cubed
Potato 1.0 Cup Cubed
Drumsticks 2.0 Nos
Tomato 2.0 Nos
Ladies Finger 1.0 Cup
Small Onions / Shallots 15.0 Nos
Grated Coconut 1.0 Cup
Coriander Seeds powder 2.0 TBSP
Red Chilli Powder 2.0 TBSP
Turmeric powder 1.0 TSP
Asafoetida 1/2 TSP
Curry Leaves Few
Coconut Oil 1.0 TBSP
Mustard Seeds 1/2 TSP
Fenugreek Seeds 1.0 TSP
Dry Red Chillies 1.0 Nos
